Strawberry & Raspberry Cookie Dessert


What do you get when you have sugar cookie dough, strawberries, raspberries, cream cheese, heavy cream & birds custard powder in the pantry and fridge?

A
 Yummylicious 
Strawberry Cookie Dessert.

You get the chewy-ness from the cookie base


Filled in with the rich cream cheese frosting


Finishing with the creamy Birds Custard.
Topped Strawberries, Raspberries, drizzled with melted chocolate and sprinkled with a little powdered sugar.

HOW TO MAKE

Bake the cookie dough as in my recipe HERE
Make the custard as my recipe HERE

To make the Cream Cheese frosting:
Take 2 packets of Cream Cheese, room temp.
2 Tsp of Vanilla Extract 
1 cup of heavy cream, whipped
1/4 cup - 2/3 cup Powdered Sugar
 (Depending on how sweet you want it)

Mix everything together well.

Once the cookie base is cooled, layer with the cream cheese frosting first
Then add the Birds Custard
Top with sliced strawberries and raspberries
Drizzle with melted chocolate
Sprinkle with a little powdered sugar

Chill for 30 mins


With a fresh Strawberry and Raspberry Sauce
It also compliments a vanilla ice cream too!

To make the Sauce:

1/2 punnet strawberries
1 punnet of Raspberries
1/3 cups water
Juice from 1 lemon
1/4 cups of Sugar

Wash  strawberries & raspberries
 Slice the strawberries
Place everything in a saucepan & reduce down until the fruit is soft. Then puree.
Chill until ready to serve


Mmm.... It not only looks creamy and tasty
It is!

Sugar Cookie Banana Nibbles


These are SCRUMPTIOUS!!

Even if I say so myself :)
If you're looking for a quick easter treat that you can just POP into your mouth. 
Then these will do the job


Although I didn't  take any pictures of me making these,
But I can tell you how I made them.

For the bowl, I used Pillsbury Sugar Cookie Dough.

All you do is, divide the cookie dough into equal parts to fit into each well of the tin.
Mold the dough around the sides.
Then bake as directed on the package.





Now don't fret that when you peek at the cookie dough, they will
 PUFF, up. 
Just give the dough a little poke and they will deflate.
Finish baking. Once the cookie dough is cooked, take out the tin and let 
The cookies Completely cool.


BE CAREFUL WHEN TAKING THE COOKIE BOWLS OUT.
Set aside.

Once the custard has completely cooled 
Fill the Cookie bowls with the banana custard and Top with Whipped Heavy Cream
Drizzle with melted Chocolate.

Valentine Sweet Treat


Are you looking for a quick last minute treat for Valentines, well look no further. 
Make these mini Strawberry Trifles and they will all go in a flash.


All you do to make the jello set at an angle, is prop the cup you're using in a muffin tin using some paper towel


Once set you can add the custard.


To make the Birds Custard follow the steps in my post HERE

Then pour it on top of the jello.


Whisk up some Heavy Cream.


Slice some strawberries in half and then make little cuts at the top and bottom, to make them look a little more like hearts.

Drizzle, some melted chocolate over the strawberries and then I made some chocolate hearts, sprinkled with some heart sprinkles. Pop the in the fridge to set.

Then pipe the whipped cream and decorate.

Quick 'N' Easy Fruit Filled Neapolitans


Rummaging through my freezer, I came across a package of Pepperidge Farms Puff Pastry Sheets and with some Strawberries and Blueberries, which needed to be used, I decided to make something sweet and yummy.


1 Package of Pepperidge Farms Puff Pastry Sheets
1 Cup of Heavy Cream  -- Whipped
2 Cups of washed and sliced Strawberries
1 Cup of washed Blueberries.
3 cups of Custard  pre made and cooled-

Sprinkling Of Powered Sugar for the top




Bake the Pastry Sheets as Directions on the box, leave to cool and slice in half.


Dust with the powdered 
Sugar.


Time to fill 

Lay one bottom of pastry down, fill with the custard, then add some strawberries and blueberries.
Next, add dollops of whipped cream on top of the fruit. 




Put another layer of puff pastry on top. 
Repeat, finishing by using one sheet of pastry with the powdered sugar on.
Enjoy!
