Grilled Chicken with Fresh Mango Salsa




With spring officially here and summer not too far away, I decided when I saw
The wonderful fresh mango's at the store, it was time to grill some chicken.
And make some salsa.

Forgive my hazy pictures, the steam from the food was fogging up my cell!


Mango's peeled, sliced and diced. This depends on how much you want in your salsa)
1 Large Roma tomatoes
A hand full of cherry Tomatoes, diced.
3 small Limes cut in half.
1 medium red onion peeled & diced
Cilantro, washed and chopped.
2 tablespoons of Olive oil
Salt & Pepper (to taste)
1/4 Black Beans (optional)








MANGO SALSA

A sweet and sour, slightly fragrant but ever so delicious salsa.
I think this has become my new favorite quick and easy side dish.

It also works well over a bed of fresh spring green salad.
And you won't need dressing either, as the Mango Salsa will do the job.

Enjoy.


You can add the black beans or leave them out.

Grill some chicken, steam some broccoli and bake a sweet potato
And serve with the freshly made Mango Salsa.

Happy Mothers Day 2014


All of us have a mother or a mother that maybe not be a biological mother, but no matter how

She still is a mother figure for you. 

I still struggle with Mothers Day and what I mean by struggle is this.
I miss my mother.

She passed away Jan 2010.

I don't know why I still struggle. 
Maybe because I can't call her up and say, "Hi mam, Happy Mothers day, I love you."
Maybe because, I miss her hugs, her wisdom about health issues and what's the best vitamins and foods to eat to combat certain ailments.
Or
Maybe it's because I think, I'll get cards from all of my older kids, (A tradition my mam loved, if you didn't get a gift, a simple card, filled with words of love & appreciation works)
I did get emails from my kids who live in Wales & that the fact that Mothers day over there is in March

My kids here in Utah, :) They call me on Mothers Day :)

I love my kids, every one of them! :)

Or maybe that my younger little tinkers, Seren & Carys will somehow tell their daddy, "It's Mothers Day daddy, let's go and get something nice for mam" (They are only 4 & 2, so that will be a while coming) And for it not to be left to the day of, and half the day is over & end up with chocolate & bottle of soda.
(Hey chocolate is a must, but we 'DO' want more than just chocolate)

Is it that maybe, I would like breakfast in bed?
To have to NOT do any cooking or cleaning or all the other mother stuff we do every other single day!

Or to feel that we don't rate a gift, flowers, a piece of jewelry, our guys don't have to spend a fortune.

We ladies/mothers just want to feel, loved, appreciated, not taken for granted.
Even just for one day, our day, mothers day.

We want to be treated like a Queen?
YES.

I love my mother, she wasn't the best cook, bless her, she could even boil water, dry &  burn pizza (you got to ask my older girls about that one) LOL

As a child, I loved to write her little notes on her pillow. (My spelling was terrible then)
I loved to make her breakfast in bed.
I loved it when she'd take us for walks up the Triangle field and sing 'By the rivers of Babylon' and 'there's a tiny house'. I still love to sing those songs now.
Picking blackberries & making blackberry jam or pie.

But she was my sounding board, my rock an example of strength when, my dad had a brain aneurysm at the age of 41, then my mother found out she was pregnant while my father was still in ICU!
She put herself through college again, as she was the bread winner now. 
Then to be told those awful words, You have Cancer & how it invaded her health.

My Mother stood strong, she fought for her health, she stood up for her beliefs, she had a strong testimony of her Savoir, Jesus Christ.

She was there for me when I needed her.

I Miss her.
I love her.

Strawberry Cookies


I love cookies, whether they are chocolate chip, macadamia, oatmeal or many of the different varieties we can make or buy (I do prefer homemade, you just can't beat them)

And with a punnet of fresh strawberries on hand, I decided to make

Strawberry Cookies.


And they turned out wonderful, crispy around the outside, chewy in the middle, with the fresh burst of

Strawberry yumminess.


Strawberlicous!


I can't say whether the juice from the strawberries will soften the cookie on the second day
As in my home -- cookies NEVER last that long!


Go on... Bake some Strawberry Cookies.  You know you want to :)

I know they are the new favorite in our home, and what a better way to get my little girls
To eat fruit!


STRAWBERRY COOKIES
Adapted from, ButterBaking.com
Makes 24 cookies.
1/2 cup unsalted butter, softened
1/2 cup brown sugar, packed
1/4 cup + 2 tbsp white sugar
1/2 tsp vanilla
1 egg
1 1/4 cup plain flour
1/4 tsp baking soda
1/2 tsp salt
1 punnet strawberries (250g, 9oz)
2 tbsp sugar
Preheat the oven to350 f and line 2 trays with baking paper.
Hull the strawberries and slice them. Mix them with the 2 tablespoons of sugar and set aside.
Using an electric mixer, beat the butter, brown sugar, white sugar and vanilla until smooth and combined.
Add the egg, beating well.
Turn the mixer off, add the flour, baking soda and salt, and beat on a low speed until just incorporated.
Pat the strawberries dry with paper towel and very gently, stir them into the mixture.
Drop tablespoons of the dough onto the baking trays, allowing room for spreading.
Bake for 10-12 minutes, rotating the trays halfway through baking, until the cookies are golden brown.

Explore, Climb, Balance & Pick Flowers



EXPLORE

Yesterday my friend, Jessica had my girls for me, so I could just relax and feel better.

After a week of looking after sick little girls, and then kindly sharing with me!
  Now, I'm still trying to rid myself of the hacking chesty cough and very sore, raspy raw throat.

I felt sorry for my girls, they had just finished dinner and they both sat on the back of the sofa, looking out of the window. They were trying to call, bang on the window and get the little boy's attention, who by the way, was playing outside.

I looked at the mountain of  dirty dinner dishes (sigh) and decided that with
The weather being still nice out, 'not' let the girls go outside for some fresh air.

Then I said,  "Who wants to go outside and play?"

BALANCE



PICK


FLOWERS

Although not matter how many times I told the girls that the dandelion is a weed and not a flower
The girls would answer, "NO, it's a flower."
  

AND THE WHOLE TIME CARYS INSISTED TO CARRY HER BUCKET
WHICH WAS LOADED WITH ALL THE PICKED DANDILIONS & STUFF!

 What do I mean by looking down?...

I am guilty of this too. But being a busy mother, I don't have time -- I don't have a Facebook / instagram/ twitter/ etc account. I know of many who are constantly looking down and missing out.

Well, what can I say, other than I love
The Tonight Show with Jimmy Fallon Show and when he announced that Kevin Bacon was his first guest and how good Kevin's new show The Following (just finished it's 2nd season)  then he announced there's a 'BAN' on Dancing on the Show. I laughed... And what Treat, as Kevin rarely does this, if ever..
To watch a lean, but an older, yet still handsome
 Kevin Bacon, strut his stuff and break into his role as 
Ren McCormack

Footloose.....


I watched this movie SO many times with my best friend Lisa... We knew all the dance moves and pretty much all of the dialogue... And if you lived through the 80's you're gonna love this

Chicken in Lemon & Parsley Sauce



Since Easter craziness, I've not really done any crafts of late, plus the weather has not been the very best.
Today all it's done is RAIN and thunderstorms! 
Which reminds me of being back home in Wales - the Rain that is.

I have been doing good lately, even with the naughty but nice easter chocolate madness.
I have kept up with counting my calories and exercising - to which I am pleased to say
That with the help of my LOSE IT app 
I am down 7lbs in 5 weeks
  This is my 6th week and weigh in this wed)
The app LOSE IT is so easy to use. I love it.
Yes, it does take a little time to calculate your meals of your cooking from scratch, but one you have them in the app, it's good to keep track of your calories.

So with yet another day inside, and wondering as to what I was going to make for dinner
And that it would be low in calories I decided on chicken tenders.


This is what you'll need:
 2lbs of chicken tenders
Flour
Lemon Seasoning
Salt and Pepper
Caper
Apple Cider Vinegar
Rice Vinegar
Parsley, Chopped
Lemon, squeezed.
Vegetable or Chicken Stock



Season the chicken with S&P.
Then lightly flour and set aside.


Heat your skillet with 3 Tablespoons of Olive Oil, 
Once the oil is hot, add the chicken.


Cook for 3 - 4 minutes on each side.
Once cooked, add the capers (if you don't like capers leave out) 
 & 2 Tablespoons of butter 
Good couple of splashes of Rice Vinegar
2 Tablespoons of Apple Cider Vinegar

Then cover and simmer for 3-4 mins
(If you're a wine drinker you can use White Wine instead of the vinegars ) 


Add the vegetable stock and cook for another minute.
Then add the parsley  and lemon juice, and allow to cook for 15 minutes.
Remove the chicken, cover and set aside. 



Now, I like my sauce to taste a little tastier, so I added 1/2 Tsp of Chicken Bouillon.
Stir well.


Add some cornflour to thicken the sauce. Stir well


Then to make it a little creamier, add some milk or cream & stir.
Stir well


Add the chicken back into the sauce, add some fresh parsley, cook for another few minutes.
Then serve.

You can serve with a fresh, tomato, cucumber & green onion salad,
Which is tossed in dill, lemon juice and salt.

This a quite a tart, yet tangy chicken dish, but quite delicious :)

Add a side of steamed jasmine rice 
&
A dollop of
Fat free Fage yogurt with chopped parsley, seasoned with salt  & pepper.
