Collabro!


What does a laborer, sales assistant, kitchen salesman, restaurant worker and a hospital worker have in common?

They sing.

And can they sing?

Oh my...YES they can. 

Their name is Collabro
and their names are:
Jamie, Matt, Thomas, Michael and Richard.

I love watching America's Got Talent, but seeing as I was born and lived most of my life in Wales, I do like to peek at Britian's Got Talent from time to time, to see whats new in my home country.

So when I came across this audition by these 5 boys, I watched and waited to hear them sing.

Now just watch the judges initial response to 'yet another boy band' , Simon Cowells face is priceless!! And as the camera scans the audience, they are not sure either about these young boys. 

Until the music starts and the belt out a wnoderful rendition from a really well known Book/West End/Broadway/Movie, they all change their minds!

I'm pretty sure these lads will go along way in the music industry, especially if Simon Cowell has anything to do with them.

Age means nothing to this lady!


Paddy Jones is Nearly 80 and dances like she is still a young pup of 20!

Just watching Paddy dance makes me want to do better. She is a fit woman and what I mean by fit is Healthy Fit. She must put hours of practice to do what she does.
What an example for anyone to try to be better, even if it's going for a walk. Or like me, to just get up in the morning, and not think, "ugh! I have to workout", but just DO my Slim in 6 Exercise DVD.

When I lived in Utah, I used to Irish dance - which is such a whole body workout, even with your arms down at your side. My dance troupe is called, Rinceoiri Don Spriaoi. They are a FAB bunch of people :) And Ben & Brooke Curnow are wonderful and Ben is the best teacher & Irish dancer! So is his wife Brooke :)

I hope that if we move back to Utah, Rinceoiri Don Spriaoi will still be going and I can get back into Irish dance.

I hope that when I reach 79! I can still be as active as Peggy Jones

Sugar Cookie Banana Nibbles


These are SCRUMPTIOUS!!

Even if I say so myself :)
If you're looking for a quick easter treat that you can just POP into your mouth. 
Then these will do the job


Although I didn't  take any pictures of me making these,
But I can tell you how I made them.

For the bowl, I used Pillsbury Sugar Cookie Dough.

All you do is, divide the cookie dough into equal parts to fit into each well of the tin.
Mold the dough around the sides.
Then bake as directed on the package.





Now don't fret that when you peek at the cookie dough, they will
 PUFF, up. 
Just give the dough a little poke and they will deflate.
Finish baking. Once the cookie dough is cooked, take out the tin and let 
The cookies Completely cool.


BE CAREFUL WHEN TAKING THE COOKIE BOWLS OUT.
Set aside.

Once the custard has completely cooled 
Fill the Cookie bowls with the banana custard and Top with Whipped Heavy Cream
Drizzle with melted Chocolate.

Carrot Muffins With Creamy Cream Cheese Frosting.



Easter is only 2 days away!
And time to bake some carrot muffins.

The only thing that takes time making these are grating the carrots & chopping the walnuts!
 Unless you already have pre-grated carrots which cuts the time in half.
These are yummy and filling. 
And if you're like me, you'll be reaching for another dollop of cream cheese frosting
 To finish off that last bite or two of the muffin.

Here is what you will need to make Carrot Muffins. 


This is the original amount which makes 52.

Just half the amount of ingredients to make less.

(1 Cup = 8oz)

10 Cups Grated Carrots
1 1/2 Cups Coconut
1 Can Crushed Pineapple (250 grams)
1 Cup Chopped Walnuts

5 Cups Sugar
2 1/2 Cups Vegetable Oil
6 Eggs
2 Tablespoons Vanilla
2 Tablespoons Baking Soda (dissolved in 1 Tablespoon water)
10 Cups Flour
1 1/2 Teaspoon Cinnamon
1 1/2 Teaspoons Salt

Oven 350 - 375 deg ( 175 - 190 C)

HEAT THE OVEN.



Combine the grated carrots, chopped walnuts, coconut & pineapple

And mix well, set aside till later.



Mix the sugar and oil well, then add 1 egg at a time. 


Beating well in between each one. 


Mix the baking soda with the water 


Add the diluted baking soda & Vanilla Essence to the Sugar & oil mixture.
Beat well.


Next, add HALF of the flour, all of the cinnamon & salt.
Mix well


Now take the carrot mix and add the remaining FLOUR
AND
FOLD IN!


Don't over fold the flour in - Muffins are better if not mixed too much
After the flour has been added.


Divide the muffin mixture into your muffin or cupcake tins and bake for 20-25 minutes.


While the muffins are baking, you can make the,
 Cream Cheese Frosting.

2 packs of Cream Cheese (200 grams each)
3/4 Cup of Softened Butter
2 Teaspoons of Vanilla
Dash of All Spice
5 Cups of Powdered Sugar
1 1/2 Cups Marshmallow Fluff (which I forgot to take picture of)


Beat the butter till soft, then add the cream cheese


Beat well together.
Add the vanilla & all spice, and Beat again.


Add the powdered sugar slowly and mix well.
Now, add the marshmallow, beating well.


Till the frosting forms peaks.


Take out Muffins when they are cooked 
(Golden brown and toothpick comes out clean after being inserted into the muffin)
Leave to completely cool.


Once cooled, slice off the tops and cut the tops in half.
And set aside.


Fill the muffins with the cream cheese frosting.
Then pop back on the two halfs of the muffin slices and decorate with some Cadburys Mini Eggs 
And Easter sprinkles.

Visit to the ER!


Our baby girl, Carys had her first visit to the ER today!
She and her sister Seren went with daddy for a drive
(To give mammy a little break)
And 
As they were getting out of the car 
 Oops A Daisy!
Carys fell.
Flat on her face, which left her needing a little more than a band aid.


Waiting in the ER, with a numbing cream on her laceration!



Then Carys was not a happy bunny when then placed a collar on her.

Of coarse, she didn't injure her neck or anything, but as protocol goes, it was necessary.
Until she was seen by the doctor.
Carys ended up with 3 stitches, which she kicked and screamed while it took4 of us to hold her while the doctor stitched her up. They did give her medicine to help calm her and hopefully knock her out--
 But no, Carys wouldn't comply with that lol.

 4 & 1/2  hrs later, we're home and she is finally sleeping,
Completely worn out from her big day.

Our poor sweet little baby girl.

Now we just have to wait for the whopping hospital bill!
And with no insurance and Jason a full time Graduate Student 
I'm not looking forward to those $$$$ signs.

But all in a day and the life of being a parent right.
