Salted Caramel Rice Krispie Treats



Rice Krispie Treats, you either don't like them or you love them.

Well, in this case you're going to LOVE them.
Firstly, they are super easy to make, secondly did I say you're going ot LOVE them :)


You, get the gooey, stickyness from the marshmallow, crunchiness from the Rice Krispies
And then in my opinion comes the best,
The salted caramel topping :)


Salted Caramel Rice Krispie Treats
  • 3 TBSP butter
  • 1 10-oz package regular sized marshmallows or 4 cups mini marshmallows OR you can use marshmallow fluff a 7.5 oz size 
  • 6 cups Rice Krispie Cereal
  • 1 package Kraft Caramel Bits
  • 2 TBSP milk
  • About 2 tsp coarse sea salt


Melt the butter, in the microwave.
Today, I used the marshmallow fluff
 ( but if your using regular marshmallows, you will need to melt them)
Mix the melted butter and marshmallow together 


Add the Rice Krispies and stir well. I spray my spoon with non-stick spray. Our if you like to use your hands, you can spray them too, that way you don't get the mix stuck all over  your hands. Well, that part I don't mind - I get to lick it off! Albeit make sure you wash your hands before handling the treats again!


Press the krispie mixture into a sprayed pan. I used non-stick spray again.


Place the caramel bits & milk into a dish and pop in the microwave and melt for about 1 & 1/2 min.
Stir and if they haven't quite melted pop them back in and do 15 sec increments until ther are melted.

STIR well and then pour over the top of the Rice krispies. 


Next sprinkle the sea salt over the caramel.
Pop in the fridge to set. 
Take then out and cut into squares.

Bacon & Cheese Quiche


Looks delicious, doesn't it!

Even though the weather here is still cold and snowy, tonight, I chose to go light a little lighter with a Bacon & Cheese Quiche, with Roasted Rosemary Potatoes & Salad.


Here's what you need to make a Bacon & Cheese Quiche
(I did cheat a little and used a premade pastry crust)
1 packet of Bacon
1 Cup of Cheddar Cheese
2 Onions
4 Large Eggs
1 cup of Heavy Cream
1 Cup of Milk
1/4 Tsp Salt
1/4 Tsp Pepper
1 Tsp of Italian Seasoning
Pinch of Nutmeg
Preheat Oven 425 Deg


Line your pan with your pastry and cover with foil.
 Bake in Oven for 10 mins, then take it out and set aside. 
Turn the Oven down to 325 Deg.



Dice onions and saute in a pan until slightly browned.




Cook the bacon.


Layer some cheese first, then add bacon and onions, then finish with the cheese.


Measure the cream, milk, and eggs into a jug and whisk, add the seasonings and stir well.




Pour Cream/milk/egg mixture over the Quiche.
(I used a smaller pan this time and I had some egg mixture left over, so I poured it into a greased dish)

Place in oven and bake for about 40 mins.
To test poke a wooden toothpick into the middle and if it comes out clean, your quiche is cooked.



Now, while the quiche is cooking, I made some easy and quick Rosemary Roasted Potatoes.
Potatoes, Cut into chunks.
Rosemary
Sea Salt
Pepper
Olive Oil


Drizzle Olive Oil over the potatoes, sprinkle the Rosemary and Salt/pepper over and toss
Until each potato is coated. Pop in the oven to cook. 


Check your Quiche, once the pick comes out clean and its nice and golden brown take it out and let it sit and cool for ten minutes.


                 And here you have a delightful light dinner of

Bacon & Cheese Quiche
With Roasted Rosemary and Olive Oil Potatoes and a Dollop of  Sour Cream and Chive Dip

*To Make the Sour Cream Chive Dip*

2 Cups of Sour Cream
1 Cup of Mayonise
Dash of Malt Vinegar 
3 Overflowing Tablespoons of Chives 
(You can use Dried chives if you don't have fresh)
Salt and Pepper to Taste.

*Mix everything together in a bowl and pop in the fridge till you're ready to use*

Yorkshire Puddings / Popovers

               


From as early as I can remember
 Have always been a staple
In the 'British Sunday Dinner'
Where we eat them as a savory, with a roast, vegetables and yummy gravy.

It's the 'Norm' to know 'How to' make Yorkshires. Although some may have a hard time to get them to RISE!! Argh ...lol

Now here in  the USA.
Now if you want to make Sweet Yorkshires/popovers
Just add some sugar, or cinnamon sugar.. 
The possibilities are endless to make savory or sweet.

Over the years, I have made so many Yorkshires...yet when I lived in Utah
The altitude.... Hindered the height of my Yorkshires :( boohoo

BUT.... Here in Madison

My Yorkshire Puddings RISE!
 WOOHOO YEAH.

Here is what you need to make Yorkshire Puddings or Popovers.


3 Eggs
1 1/2 cups Milk
1 1/2 cups of Flour
1/4 Tsp Salt
Oil  (to use for muffin tin) or if you have meat drippings USE that, 
as your savory Yorkshires will taste heavenly


Muffin Tin

Before you begin Heat your oven 425 deg 
While that is preheating you are going to make the Yorkshire/popover mixture.





Blend you Eggs & Milk



Add your Flour




Blend well Until you have NO more Lumps
I leave my mixture to settle, while the oil is heating in the oven.
 Then just before I pour into the HOT OIL
I give it a quick Whisk again.




I use not a full soup spoon of Oil, for EACH Muffin casing.
Pop it into the oven, for a good 3-4 mins.



To check if the oil is hot enough, I do a sizzle check.

Just dip your finger in your mixture then let it drip into the hot oil...

If it Sizzles.... The oil is hot enough.



The mixture will fill 1 full muffin tin.

Bake in the oven for  20 minutes then reduce oven temp to 350 deg.
Continue to bake till golden brown & dry to touch.

Voila!
